Hummingbird Bakery is the first ever place I bought cupcakes from in London! Whenever I go to London I try and pick up some cupcakes as they’re my absolute favourite! They’ve been around for 12 years now and it was so interesting to read up on their history and discover that cupcakes and Red Velvet cakes weren’t really a thing in the UK until they came around!
I was pretty excited for their second baking book as the first one was so great. One of my favourite recipes in the first book is the brownie recipe… mmm!
This book has some great recipes too and also includes some very quirky ones that I’m excited to try like Tomato Soup Cupcakes! That sounds crazy but I love trying different and odd things. There’s a good range of recipes here so I think it would be perfect for a beginner baker as well as a pro!
Today I decided to bake the Strawberry Chiffon Pie as it looked amazing in the book. It’s going to be a challenge as I’ve never baked anything like this before!
One thing to take note of is that it’s a very good idea to read the recipe carefully the day before, as I didn’t realise parts of this recipe takes time to set etc.! The good thing was that this recipe was a lot easier to make than I expected!
Another important note is that I did leave out the egg white part. I had come to the final stages and realised that you don’t actually bake the pie, and I’m not happy eating raw egg white and risking being ill, or making anyone else ill if I’m serving this to children or other people. I did some research afterwards and the best option for this would have been buying either powdered egg white or pasteurised egg whites (there’s a brand called Two Chicks here in the UK that sell it). That way you can safely use raw egg whites in recipes. That’s another reason to read the recipe through fully before buying ingredients, as it just “egg whites” and not “pasteurised egg whites”!
Instead of the egg white I just used more whipping cream and although the end result was different to the one in the book the pie was super tasty and the strawberry flavour was so refreshing!
There’s so many other recipes I want to try from the book like Peanut Butter and Marshmallow Cookies. The Red Velvet Pancakes sound amazing too! So who knows, you might see some more of these here on my blog or over on my Instagram! Of course there’s those curious recipes like the 7UP Pound Cake and the Tomato Soup Cupcakes that I want to try!
